Sweet and Sour Chicken

Ingredients

  • 1 lb chicken breasts, cut into 1/2 inch pieces
  • 2.5 tbsp balsamic vinegar
  • salt
  • 2 tsp soy sauce
  • 1 tbsp cornstarch
  • 3 tbsp ketchup
  • 3 tbsp sugar
  • 3 tbsp veg oil
  • 3 cloves garlic, minced
  • 2 carrots, thinly sliced
  • 3 scallions, cut into 1/2 inch pieces
  • 3 cups snow peas, cut in half

Preparation

Step 1

Toss the chicken with 1/2 tbsp vinegar and a pinch of salt in a bowl. Mix the remaining 2 tbsp vinegar, soy sauce, cornstarch, ketchup, 3 tbsp sugar 1/3 cup water and 1/2 tsp salt in another bowl.
Heat 2 tbsp oil in a large skillet over high. Add chicken and stir until opaque, about 2 minutes. Remove with a lotted spoon and transfer to a plate. Discard oil and wipe out skillet.
Heat 1 tbsp oil in skillet, then stir fry the garlic with a pinch each of salt and sugar, 15 seconds. Add carrots and scallions and stir until crisp-tender, 2 minutes. Add chicken, snow peas, and soy sauce mixture, stir until chicken is cooked through and sauce is thick, 3-4 minutes.
Serve with rice or noodles.
