Beet Salad

Ingredients

  • Beets
  • Arugula
  • Avocado sliced or diced
  • sliced beets
  • Cranberries (1/4 - 1/2 cup) dried
  • Goat cheese rolled in walnuts or walnuts sprinkled on top
  • Balsamic vinagrette

Preparation

Step 1

Scrub beets clean, wrap in aluminum foil with a little olive oil and salt. Roast on 400 degrees for about 40 minutes or until tender. Let cool. Peel and slice beets.

Make salad with arugula, avocado, beets, cranberries, goat cheese and walnuts

Use balsamic dressing
