Ingredients
- 1 C sliced mushrooms
- 1 med yellow pepper cut into strips
- 1 med green pepper cut into strips
- 1 onion cut into strips
- 2 T olive oil
- 1 garlic clove, minced
- 1/2 tsp crushed red pepper flakes
- 1 can (28 oz) crushed tomatoes
- 1 tsp Italian /Seasoning
- 1/2 tsp salt
- 1 lb uncooked med shrimp, peeled and deveined
- 6 oz hot cooked linguini
- 3 T fresh minced parsely or 1 tsp dried flakes
Preparation
Step 1
- Spray a non stick skillet and saute mushroom, peppers and onions until tender; add garlic and pepper flakes; cook one more min.
- Stir in tomatoes, Italian seasoning and salt; bring to a boil; simmer uncovered 12 - 15 min. until veggies tender
- Add shrimp; cook and stir 5 -7 min until shrimp turn pink
- Drain linguini stir into sauce; sprinkle with parsley
