Spicy Shrimp and Pepper Pasta

Ingredients

  • 1 C sliced mushrooms
  • 1 med yellow pepper cut into strips
  • 1 med green pepper cut into strips
  • 1 onion cut into strips
  • 2 T olive oil
  • 1 garlic clove, minced
  • 1/2 tsp crushed red pepper flakes
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp Italian /Seasoning
  • 1/2 tsp salt
  • 1 lb uncooked med shrimp, peeled and deveined
  • 6 oz hot cooked linguini
  • 3 T fresh minced parsely or 1 tsp dried flakes

Preparation

Step 1

- Spray a non stick skillet and saute mushroom, peppers and onions until tender; add garlic and pepper flakes; cook one more min.
- Stir in tomatoes, Italian seasoning and salt; bring to a boil; simmer uncovered 12 - 15 min. until veggies tender
- Add shrimp; cook and stir 5 -7 min until shrimp turn pink
- Drain linguini stir into sauce; sprinkle with parsley
