Ingredients
- 1 lb peeled and quartered russet potatoes
- 2/3 cup half and half
- 2 tbsp butter
- 1/2 cup grated truffled pecorino cheese
- salt and pepper

Preparation
Step 1
Cook potatoes in a pot of simmering water until tender, 30 minutes. Drain. Heat half and half and butter in the pot. Add potatoes and mash. Stir in grated cheese, salt and pepper. Cover and let stand 5 minutes
