Rhubarb Bread

Ingredients

  • 1 1/2 c brown sugar
  • 1/2 c oil
  • 1 egg
  • 1 c buttermilk
  • 2 1/2 c flour
  • 1 t salt
  • 1 t soda
  • 1 1/2 c cut rhubarb
  • 1 tsp vanilla
  • 1/2 c nuts chopped - optional

Preparation

Step 1

Combine sugar and oil. Add egg and sifted dry ingredients alternately with buttermilk. Add rhubarb, vanilla, nuts. Pour into 2 large or 4 small loaf pans. Top with:

1 T butter
1/2 c sugar
1 t cinnamon

Bake at 325 for 1 hour
