Seven Layer Casserole
From Canadian Living 1987
- 1 tsp salt
- 1 can (14 oz/398ml) tomatoe sauce
- 1 cup uncooked rice
- 1 can (12 oz/341 ml) kernel corn, drained
- 1 cup water
- 1/2 cup onion, chopped
- 1/2 cup chopped green pepper
- 3/4 lb lean ground beef
- 4 strips of bacon, cut in half (this is a favourite, might want to increase).
Stir salt and pepper into tomato sauce. In gresased 6-upc(1.5L)casserole, arrange ingredients in layers as follows; rice, corn, half of the sauce, 1/2 cup(125 ml)of the water, onion, green pepper, beef, remaining sauce and water. Top with bacon strips.
Bake, covered in 350F oven for 1 hour. Uncover and bake 30 minutes more.
