Ingredients
- 8 oz pineapple divided into 8 pieces
- 8 tsp honey simple syrup
- 4 heaping tsp chopped mint leaves
- Ice
- 2 lemons, juice
- 16 oz seltzer
- 4 oz limoncello
- Ice
Preparation
Step 1
1. For the simple syrup, heat 4 tbsp water and 4 tbsp honey in a small pot over low heat. When the mixture is hot remove it from the heat and let cool.
2. Add a piece of pineapple, 2 tsp simple syrup, and 1 tsp chopped mint to each of 4 tall glasses and muddle. Fill half of each glass with ice.
3. In a pitcher, mix together the lemon juice, sletzer and limoncello. Divide the mixture among the glasses and garnish with fresh pineapple and mint sprigs.
