Chicken, Bean, Rice Soup

Ingredients

  • 3/4 cup chopped celery
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 Tbsp. canola oil
  • 3 cans (14 1/2 oz) chicken broth
  • 2 cans (15 oz) black beans, rinsed and drained
  • 1 jar 916 oz) salsa
  • 1 cup cubed cooked chicken breast
  • 1 cup cooked long grain rice
  • 1 Tbsp. lime juice
  • 1 tea. cumin

Preparation

Step 1

In a large saucepan, saute celery, onion and garlic in oil until tender. Stir in the remaining ingredients' heat through.
