Chicken Breasts in Hot Tomato Vinagrette

Ingredients

  • Tomato Vinaigrette:
  • 1 T olive oil
  • 1 clove crushed garlic,
  • 1/8 t. crushed red pepper
  • 1 T fresh basil
  • 1 3" strip lemon peel
  • 1 can undrained tomatoes
  • 1/2 t sugar
  • 1 T wine vinegar
  • 1 t salt
  • 1 T chopped parsley
  • 2 whole chicken breasts, halved
  • 1 T olive oil
  • 1 T butter
  • 1 T parsley

Preparation

Step 1

In med. saucepan heat olive oil over med. heat. Add garlic, crushed red pepper & basil; cook 1 min.
Add lemon peel, tomatoes & sugar, breaking up tomatoes. Simmer 20 min. remove from heat; stir in vinegar, salt & parsley.
Pound chicken. Cook in olive & butter 3 min. each side. Pour warm vinaigrette over chicken & serve.
