Chicken Fingers with curried ketchup
- cooking spray
- 2 eggs
- 1 tbsp dijon mustard
- 2 tsp curry powder
- 1 tsp ground cumin
- 2 cups panko breadcrumbs
- 2 skinless, boneless chicken breasts, cut into 1 inch wide strips
- 3/4 cup ketchup
- juice of 1 lime
Preparation time 15mins
Cooking time 50mins
Preheat oven to 400. Set a rack on a baking sheet and mist with cooking spray. Whisk eggs, mustard, 1 tsp curry powder, cumin and 1 tsp salt in a bowl. Mix panko with 1/2 tsp curry powder in another bowl.
Dip the chicken strips in the egg mix, the coat with panko. Place on the rack and mist with cooking spray. Bake until golden brown, 20 minutes.
Mix the ketchup, lime juice, and 1/2 tsp curry powder in a small bowl. Serve with the chicken.
