Cannellini beans with lemon, roasted red peppers and bacon

Ingredients
- 1 medium lemon, scrubbed
- 2 ox bacon (2 slices) cut into thins strips crosswise
- 2 TBS EVOO
- 1 tsp fresh rosemary
- 1 garlic clove minced
- 1/8 tsp crushed red pepper
- 30 ox cannellini beans (2 cans if using)
- 3/4 low sodium chicken broth
- 1 red pepper, roasted or grilled, cut into small dice or jarred if necessary
- pepper, salt

Preparation
Step 1
Shave 6 strips of lemon zest, cut into 1/4 inch wide, juice half the lemon
n saucepan, cook bacon with 1 TBS EOO stirring til begins to brown, 3-5 mins. transfer bacon to paper towel
remove pan from heat and add rosemary, garlic and red pepper, cook tils sizzling, 30 seconds.
return pan to medium heat, add beans and chicken broth roasted peppers and lemon zes. bring to boil, reduce to maintain simmer 10-15 mins.
stir in lemon juice and red pepper flakes.
sprinkle with bacon
