Ingredients

    c. veg. oil

  • 3

    eggs

  • 2

    c. sugar

  • 2

    c. grated peeled zucch.

  • 2

    tsp. vanilla

  • 1

    20oz. canned drained crushed pineapple

  • 3

    c. flour

  • 2

    tsp. baking soda

  • tsp. cinnamon

  • 1

    tsp. salt

  • ¾

    tsp. nutmeg

  • ½

    tsp. baking powder

Directions

Beat oil and eggs in mixing bowl till blended. Stir in sugar, zucch. and vanilla. Add pineapple and mix well. Combine flour, baking soda, cinnamon, salt, nutmeg and baking powder in bowl and mix well. Stir into zucchini mixture. Spoon into 2 greased and floured 5"x9" loaf pans. Bake 350 degrees till done.
