Stewed Lentils

Ingredients

  • Dressing:
  • 1 cup dried green lentils
  • 1 finely chopped shallot
  • 1 clove chopped garlic
  • 1 bay leaf
  • 5 cups water
  • Salt
  • Pepper
  • 1 teaspoon red wine vinegar
  • 2 teaspoons olive oil

Preparation

Step 1

In a medium saucepan, bring to a boil lentils, shallot, garlic, bay leaf and enough water to cover ingredients by 2 inches. About 5 cups water. Reduce heat and simmer until lentils are tender, about 20 minutes. Drain liquid and return lentils to pan.
Season with salt and pepper, Stir in 1 teaspoon vinegar and 2 teaspoons olive oil.
