Smoked Honey-Mustard Salmon

Ingredients

  • 4 alder or oak wood chunks
  • 1-3 lb fresh or frozen salmon fillet
  • 1/4 cup stone-ground mustard
  • 2 tbsp honey
  • 1 tsp finely shredded lemon peel
  • 1 tbsp snipped fresh thyme
  • 2 cloves garlic, minced
  • 1/2 tsp kosher salt
  • 1 tbsp lemon juice
  • 1/2 tsp coarsely ground black pepper
  • honey (optional)
  • fresh thyme sprigs (optional)

For at least 1 hour before smoke-cooking, soak wood chunks in enough water to cover. Drain before using.

Meanwhile, thaw fish, if frozen. Rinse fish; pat dry with paper towels. For sauce, in a small bowl, combine mustard, 2 tbsp honey, lemon peel, lemon juice, snipped thyme, garlic, salt, and pepper; set aside.

Prepare smoker. Add drained wood chunks to smoker. Grease top rack of smoker. Place fish, skin side down, on top rack. Cover and smoke at 225 to 250 degrees f, for 2 to 2 1/2 hours or until fish flakes easily when tested with a fork, brushing with sauce during the last 15 minutes to 30 minutes of smoking.

If desired, drizzle fish with additional honey and garnish with thyme sprigs.
