Grilled Greek Vegetables

Ingredients

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 small turnips, peeled and thinly sliced
  • 1 large zucchini sliced
  • 2-4 Tbs. olive oil
  • 1-2 tsp. Greek seasoning

Preparation

Step 1

In a large bowl, combine the vegetables. Drizzle with olive oil and season with Greek Seasoning. Start with the smaller amounts of oil and use more as desired. Mix to thoroughly coat the vegetables. Grill in basket over medium heat direct heat or broil until slightly browned, turning once or twice, roughly 5 minutes per side.

Turnips take longer to cook so either slice them thin or plunge them into boiling water for 2 minutes before mixing with the other vegetables.

This is a great recipe with other fresh vegetables.
