Granola - Pumpkin, Cranberry, and Nut

Ingredients

  • 3 cups rolled oats
  • 1 cup dried cranberries
  • 1/2 cup pistachios
  • 1/2 cup chopped pecans
  • 1/4 sunflower seeds
  • 1 Tbsp gluten-free flour
  • 1 Tbsp ground flax
  • 1 Tbsp cinnamon
  • 1 Tsp nutmeg
  • 1 Tsp salt
  • 1/3 cup maple syrup
  • 1/2 cup canned pumpkin
  • 1 Tbsp molasses

Preparation

Step 1

Pre-heat oven to 325

Combine all dry ingredients in a large bowl

In a smaller bowl mix together pumpkin, maple syrup, and molasses - add to dry mix

Stir together until moist

Spread on a jelly roll

Bake for 40-50 minutes - stirring every 10 minutes until golden brown
