Grilling - Cilantro-Scented Couscous

Ingredients
- 1/2 c sliced green onions (4)
- 1 tbls olive oil
- 1/2 tsp smoked paprika or paprika
- 1 c reduced-sodium chicken broth
- 2 tbls snipped fresh cilantro
- 3/4 c couscous
Preparation
Step 1
In a medium saucepan, cook 1/2 cup sliced green onions in 1 tbls hot oil over medium heat until tender. Stir in 1/2 tsp smoked paprika or paprika; cook and stir for 30 seconds. Carefully add 1 c reduced-sodium chicken broth and 2 tbls snipped fresh cilantro. Bring mixture to boiling; stir in 3/4 c couscous. Remove from heat. cover and let stand for 5 minutes. Fluff couscous with a fork before serving.
