Ingredients
- Roasted Broccoli
- 4 c. of Broccoli cut bite sized
- 1 c. grape tomatoes
- 1 Tbsp. of extra virgin Olive oil
- 2 1/2 cloves of garlic minced
- 1/4 tsp. Salt
- 3/4 tsp. lemon zest
- 1 Tbsp. Lemon Juice
- 12 sliced olives (black)
- 1 tsp. oregano flakes
- 2 1/2 tsp. of rinsed Capers
Preparation
Step 1
Pre heat oven to 450 degrees.
Mix together broccoli, tomatoes, olive oil, garlic and salt. Spread on lined baking sheet (I used non-stick foil).
Bake until broccoli starts to brown 10 - 13 minutes.
In separate bowl combine lemon zest, olives, lemon juice, and capers. When broccoli is done toss with lemon mixture and serve warm!
