Ingredients

  • 3 potatoes
  • 2 tbsp. oil
  • 3/4 tsp. salt
  • 3/4 tsp. pepper
  • 3 cups cornflakes
  • 1/4 cup flour
  • 1 tsp. Italian seasoning
  • 1 tsp. lemon zest
  • 1 egg
  • 1 tbsp. milk
  • 4 halibut or cod fillets

Step 1

Cut potatoes into 8 wedges. Toss with oil 1/4 tsp. salt and 1/4 tsp. pepper. Place on baking sheet. Bake at 450 degrees for 20 minutes. Turn. Bake 10 minutes.
Pour cornflakes into bag and crush. Combine, flour Italian seasoning, lemon zest, salt and pepper. Combine egg and milk.

Dip fish into flour mixture then into egg mixture and then into cornflake crumbs.

Bake at 450 degrees for 8 minutes on baking sheet.
