Ingredients

  • 1 T unsalted butter
  • 1/4 cup sliced almonds
  • 1/2 lb. snap peas, ends trimmed
  • 2 t minced shallot
  • 1 t fresh lemon juice
  • Salt and pepper
  • Brown butter breadcrumbs for topping

Preparation

Step 1

Melt butter in medium skillet over medium heat. Sauté almonds until golden brown and becoming fragrant, and butter fats begin to brown. Stir frequently to avoid burning, about 1 and 1/2 minutes. Add shallots, sautéing until soft, then add snap peas. Toss until peas are crisp-tender, 1 and 1/2 to 2 minutes. Remove skillet from heat; add lemon juice. Season to taste with salt and pepper. Top with brown butter breadcrumbs if desired, and serve
