Tropical Bundt

Ingredients

  • Frosting:
  • All Purpose flour - 4 C
  • sugar - 2 C
  • baking powder - 1 TB
  • baking soda - 1 TB
  • cinnamon - 2 TB
  • eggs - 3
  • coconut oil - 1 C
  • bananas - 4 ripe
  • crushed pineapple - 1 20oz can undrained
  • vanilla - 3 tsp
  • shredded coconut - 1 c
  • chopped salted pecans - 1 C
  • powder sugar - 1 C
  • milk - 1 tsp
  • flavoring (banana or pineapple) - optional 1/2 tsp

Preparation

Step 1

In a large bowl combine:
flour, sugar, powder, soda, cinnamon

In vitamix combine:
eggs, oil, bananas, vanilla

mix eggs mixture with flour mixture

fold in pineapple & coconut shreds & pecans

grease & flour bundt pan
pour in dough
bake at 350 for 70 min or until toothpick comes out clean

DO NOT FROST WHILE WARM - if you do the frosting will soak in and not look pretty
