Peanut Butter Cookies

Ingredients

  • 1 cup peanut butter
  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 cup granulated sugar
  • 1 cup packed brown sugar or 1/2 cup honey
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/2 cups all-purpose flour
  • 1 cup honey-roasted peanuts, chopped (optional)
  • Granulated sugar

Preparation

Step 1

In a very large mixing bowl beat peanut butter, butter, and shortening with an electric mixer on medium to high speed for 30 seconds. Add the 1 cup granulated sugar, the brown sugar, baking soda, and baking powder. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in nuts, if using. Cover and chill dough 1 hour or until easy to handle.

Preheat oven to 375 degrees F. Shape dough into 1-1/4-inch balls. Roll in additional granulated sugar to coat. Place 2 inches apart on ungreased cookie sheets. Flatten by making crisscross marks with the tines of a fork. Bake for 7 to 9 minutes or until bottoms are light brown. Let cool on cookie sheet for 1 minute. Transfer to wire racks and let cool.
