Ingredients
- 1/2 cup butter, room temp
- 1/2 cup brown sugar firmly packed
- 1 cup flour
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 cup rolled oats
- 3/4 cup raspberry preserves
Preparation
Step 1
1. Preheat oven to 350F.
2. Grease an 8x8 inch Pyrex pan.
3. Mix together all ingredients, with the exception of the jam, using a pastry blender. When the ingredients are blended to a consistent color, and are crumbly, measure out 2 cups of the mixture. Press firmly into the prepared pan. Take the jam and spread evenly on top of the base, staying about ¼ inch from the edge of the pan. When the jam is spread evenly, sprinkle the remaining crumb mixture evenly over the top of the preserves. Press lightly into the jam.
4. Bake in oven 35-40 minutes, until lightly browned. Cool on a wire rack. Cut into 16 bars. Cover to store.

Tips
Butter can be softened in the microwave if you have that option. Otherwise you can prepare in advance by taking the butter out of the fridge about 60-90 minutes before you begin. You could also cut the butter into small slices and they will warm up a lot quicker.
Adding to all bar cookies often baked for Christmas: Line each 9x13 pan with release foil so bars can be easily lifted for wrapping before you are ready to cut them.
