    whole chicken

    cup butter

  • 1

    head garlic, (or 2 tablespoons chopped garlic)

  • ¼

    cup amaretto liqueur

  • Salt

  • Pepper

  • Carrots (optional, I threw in what I had in the refrigerator)

  • Lemon Olive Oil (optional, I used it for the extra taste)

  • If you want to make a cream sauce for your chicken, you will need 1 cup heavy cream.


Preheat oven to 350 degrees F (175 degrees C). Make sure your chicken is clean on the inside, all of the innards are gone. If not, take them out. Place the chicken in a baking pan, and rub with 2 tablespoons butter. Place remaining butter and 1 Tablespoon garlic inside cavity. Salt and Pepper outside of chicken, I also rubbed on the remaining garlic. I cut the ends off the carrots and cut them in half. I placed them around the chicken. Pour 1/4 cup amaretto over chicken. I drizzled the lemon olive oil on (optional) Bake chicken 1 hour and 25 minutes in the preheated oven, or until juices run clear. Let stand 10 minutes. Spoon juices from pan into sauce pan with heavy cream. stir on low heat and season to taste.
