Fiesta Pork Casserole

Good one pot meal is healthy and filling. Good for using up leftover vegetable box veggies!

Ingredients
- 400 g diced pork, trimmed of all visible fat
- 1 medium red onion, peeled and diced
- 1 tsp paprika
- 1 garlic clove, minced
- 3-4 small courgettes, cut into 1-inch chunks
- 1 red pepper, cubed into bite-sized pieces
- 1 yellow pepper, cubed into bite-sized pieces
- 198 g butternut squash, peeled and cut into bite-sized chunks
- 500 g passata with basil
- salt and pepper

Preparation
Step 1
1) Preheat oven to 160 degrees C
2) Heat Dutch oven / flameproof casserole dish and spray with cooking spray. Add the diced pork and onion and brown for 5 minutes. Add paprika and garlic.
3) Stir in the vegetables and pour in the passata plus 113ml/4 fl oz of boiling water. Season. Bring to the boil and cover.
4) Cook in the oven for 1 hour. Check seasoning and serve.
