    g diced pork, trimmed of all visible fat

    medium red onion, peeled and diced

    garlic clove, minced

    small courgettes, cut into 1-inch chunks

    red pepper, cubed into bite-sized pieces

    yellow pepper, cubed into bite-sized pieces

    g butternut squash, peeled and cut into bite-sized chunks

    g passata with basil

  • salt and pepper


1) Preheat oven to 160 degrees C 2) Heat Dutch oven / flameproof casserole dish and spray with cooking spray. Add the diced pork and onion and brown for 5 minutes. Add paprika and garlic. 3) Stir in the vegetables and pour in the passata plus 113ml/4 fl oz of boiling water. Season. Bring to the boil and cover. 4) Cook in the oven for 1 hour. Check seasoning and serve.
