Potatoes-Triple Onion Baked/Stuffed

Ingredients
- 4 large baking potatoes
- 1 lb sliced bacon, diced
- 1/2 c finely chopped red onion
- 1/2 c finely chopped yellow onion
- 1/2 c sour cream
- 2 tbsp milk
- 1 c diced American/Velveta cheese
- 1/2 c shredded cheddar cheese
- 4 grn onions, finely sliced

Step 1
Bake potatoes at 400 for 1 hour or till tender
Cook bacon over med. heat till crisp, remove to paper towels. Drain, reserving 1 tbsp drippings. Saute red and yellow onions till tender, set aside.
When potatoes are cool enough to handle, cut in half lengthwise. Scoop out pulp, leaving 1/8 inch shell. In a mixing bowl, beat the pulp, sour cream and milk till creamy. Stir in sauteed onions, cheese and 1 c bacon. Spoon into potato shells. Place on baking sheet. Bake at 400 for 25 min. Sprinkle with cheddar cheese, grn. onion and remaining bacon.
Bake 5-10 min. longer or till cheese is melted.
