Ingredients

  • 4

    large baking potatoes

  • 1

    lb sliced bacon, diced

  • ½

    c finely chopped red onion

  • ½

    c finely chopped yellow onion

  • ½

    c sour cream

  • 2

    tbsp milk

  • 1

    c diced American/Velveta cheese

  • ½

    c shredded cheddar cheese

  • 4

    grn onions, finely sliced

Directions

Bake potatoes at 400 for 1 hour or till tender Cook bacon over med. heat till crisp, remove to paper towels. Drain, reserving 1 tbsp drippings. Saute red and yellow onions till tender, set aside. When potatoes are cool enough to handle, cut in half lengthwise. Scoop out pulp, leaving 1/8 inch shell. In a mixing bowl, beat the pulp, sour cream and milk till creamy. Stir in sauteed onions, cheese and 1 c bacon. Spoon into potato shells. Place on baking sheet. Bake at 400 for 25 min. Sprinkle with cheddar cheese, grn. onion and remaining bacon. Bake 5-10 min. longer or till cheese is melted.
