Uncle Jimmy's Mole Nopales

  • 4 to 5

    chicken breasts

  • jar of nopales

  • 6 to 8

    garlic cloves

  • cup of flour

  • chicken broth

  • 4 to 6

    chili peppers (mild or hot)

  • salt to taste


Boil chicken. Shred the chicken and save the broth. Boil peppers in enough water to submerge them. Save the pepper juice. In a blender add peppers, garlic and flour. Add 1 to 2 cups of chicken broth. Turn the ingredients into liquid. Strain into a pot and stir until slowly the liquid thickens. Drain and wash nopales (throw away peppers and onions that come in the jar. When liquid thickens add nopales and chicken. Simmer on low heat until bubbles appear. Cover and continue to stir for approx. 1/2 hour. Salt to taste and serve with rice.
