Charoset

At the Passover Seder, charoset is meant to look like and remind us of the mortar the Israelite slaves used in their building. This charoset combines a variety of nuts - almonds, walnuts, pistachios - with fresh fruit, dried fruit, wine and spices. Ingredients

  • 4-5 medium green Granny Smith apples, peeled and cored
  • 2 bananas
  • 1/2 cup raisins
  • 1/4 cup almonds
  • 1/4 cup pistachios (only use if you eat kitnoyot on Passover)
  • 1/4 cup pecans
  • 2-4 tablespoons red wine
  • 2 tablespoons orange juice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sugar (optional)

Preparation

Step 1

1. Put apples, bananas, raisins and nuts into a food processor. Process to desired consistency. I grind until the mixture resembles a lumpy paste. My wife prefers to process lightly, so that the fruit and nuts keep some shape. Don't tell my wife, but the kids do prefer my saucier mixture.
2. Put the fruit-nut mixture in a bowl. Stir in wine, orange juice, cinnamon and sugar if desired. Add more wine if you want to moisten it, and add sugar if you want a sweeten it.
3. Cover and refrigerate.
