Ingredients
- Dough:
- 8 tablespoons (1 stick) unsalted butter
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 3-1/2 to4 tablespoons ice cold water
- Filling:
- 1-1/2 lbs. golden delicious or granny smith applies (2-3)
- 3 tablespoons sugar (divided)
- 2 tablespoons (1/4 stick) unsalted butter
Preparation
Step 1
Place butter in freezer 1 hour ahead. Sift flour and salt together in a mixing bowl. Grate frozen butter into flour mixture on the largest holes of a box grater. Add ice water 1 tablespoon at a time, stirring lightly with a fork just until the dough comes together. Form into a ball and flatten into a disk. Seal in plastic wrap and refrigerate 10-20 minutes.
Heat oven to 400 degrees. Cut a piece of parchment paper the length of a sideless baking sheet. Roll the dough out onto the parchment in a circle about 12 inches across. Slide the parchment, dough, and all, onto the baking sheet.
Peel and core apples, cut into 1/4 inch slices. Arrange slices on dough, overlapping slightly and leaving 2-3 inch border all the way around. Sprinkle the fruit with 2 tablespoons of the sugar, dot with butter. Fold the edges of the dough up over the filling, letting the dough pleat as you work your way around the circle. Brush the exposed dough with water and sprinkle with the remaining 1 tablespoon sugar. Bake 35-40 minutes until crust is golden and crisp. Let the tart cool on the pan 10 minutes. Slip a wide spatula under it and slide it onto a cooling rack. Serve warm with vanilla ice cream.
