One year, Martin's Aunt Jo sent us a 5 pound tin of Date Crystals. I never ate dates and thought it a very strange gift. Well, I browsed the numerous recipes and chose this one. It has become a staple in my kitchen. I've ordered at least 3 more tins over the years!

5 stars - I don't like dates. I got a 5 pound tin of date crystals from Aunt Jo for Christmas one year. This recipe was included and I've never run into anyone who doesn't like this bar. You just don't tell them that they have dates in them! - ME 1/21/2007

Ingredients

  • FOR THE PASTRY
  • 1 cup flour
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • FOR THE TOPPING
  • 2 eggs, well beaten
  • 1 cup brown sugar
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup date crystals
  • 1 cup chopped nuts

Preparation

Step 1



1. Blend flour, brown sugar and butter with a pastry blender. press into a 9x13 inch pan and bake 10 minutes 325F till nicely browned.

2. Make the topping by combining well beaten eggs with brown sugar. Add flour, baking powder and salt. Stir in date crystals and nuts and vanilla. Spread over baked crust and return to the oven to bake for an additional 20 minutes.

Tips
Adding to all bar cookies often baked for Christmas: Line each 9x13 pan with release foil so bars can be easily lifted for wrapping before you are ready to cut them.
