Corn and Butternut Squash Chowder

Ingredients

  • 2 tablespoons vegetable oil
  • 1 1/2 lbs butternut squash, cut into 1-inch cubes
  • 1 medium onion, chopped
  • 1 (10 ounce) box frozen corn, thawed
  • 1 1/2 teaspoons curry powder
  • 2 (14 1/2 ounce) cans vegetable broth
  • 1/2 cup heavy cream

Prep Time: 10 mins

Total Time: 43 mins

1 Add squash cubes and onion to hot oil. Cook for 6 minutes.

2 Add corn and curry powder. Cook 2 minutes.

3 Add salt and peppwer to taste.

4 Add broth. Cook 25 minutes.

5 Remove 1/2 of the soup. Blend until smooth. Recombine.

6 Stir in cream and heat through but do not boil.
