Potaotes - Fried with jalapenos and cheddar cheese

Ingredients

  • 2 Tbsp. peanut oil
  • 1 lb. red potatoes, cut into
  • 1 1/2-inch pieces
  • 1 ⁄4 cup chopped scallions
  • 1 jalapeño chile pepper, sliced
  • Kosher salt and black pepper to taste
  • 1 ⁄2 cup shredded white Cheddar cheese

Preparation

Step 1

Cook potatoes in a saucepan of salted, boiling water for 10 minutes; drain. Heat oil in a large cast-iron skillet over medium-high heat.

Fry potatoes in oil until golden, about 5 minutes. Add scallions and jalapeño to skillet; sauté 1 minute, then season with salt and pepper. Remove skillet from heat. Sprinkle cheese over potatoes. Residual heat will melt the cheese.
