  • 2 boneless skinless chicken breasts timmed with tenders removed
  • 1/4 tsp freshly ground pepper- divided
  • 1/8 tsp saly
  • 3 tbsp shredded gruyere or swiss cheese
  • 1 tbsp cream cheese
  • 2 tbsp breadcrumbs
  • 1 1/2 tsp chopped fresh parsley or thyme
  • 2 tsp evoo-divided
  • 2 tbsp chopped ham

Step 1

preheat oven to 400
sprinkle chicken with 1/8 tsp pepper and salt. combine cheese and cream cheese in a bowl. combine remaining 1/8 tsp pepper with breadcrumbs, parsley or thyme and i tsp oil in another bowl.
heat remaining oil in a medium ovenproof non stick skillet over medium heat. cook the chicken until browned on both sides about 2 minutes per side. move the chicken to the center so that the pieces are touching. spread with the cheese mixture, sprinkle with ham, then top with the breadcrumb mixture.
bake until the chicken is no longer pink in the center and instant read thermometer registers 165 degrees- 5-7 minutes
