Ingredients

  • 4 large sweet potatoes, peeled, cooked, and cut into chinks, or one 40oz can sweet potatoes, drained
  • 1- 8oz can pineapple chunks, drained
  • 1/4 tsp ground cinnamon
  • 1-7 1/2oz jar marshmallow fluff
  • 1/4 cup (1/2 stick) butter or margarine
  • 1 cup coarsely chopped walnuts

Preparation

Step 1

Preheat oven to 325 degrees f.

Arrange the sweet potatoes and pineapple in a shallow 2-quart baking pan and sprinkle with the cinnamon.

In a small saucepan, combine the marshmallow fluff and butter and bring to a boil over high heat, stirring constantly. Pour over the sweet potato mixture and sprinkle with the walnuts. Bake for 15 to 20 minutes, until hot and bubbling.
