Vanilla Ring Cake

Ingredients

  • Drizzle:
  • 1 cup shortening
  • 2 cups sugar
  • 4 eggs
  • 2 tbs vanilla
  • 3 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup buttermilk
  • 1 cup confectioners' sugar
  • 1-2 tbs milk
  • 1/2 tsp vanilla

Preparation

Step 1

In a large bowl, cream shortening and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and baking soda; add to the creamed mixture alternately with buttermilk beating well after each addition.
Pour into a greased and floured 10 inch fluted tube pan. Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
Combine the drizzle ingredients; drizzle over cake.
