Chocolate Peanut Butter Parfaits

Ingredients

  • OPTIONAL GARNISHES:
  • 3 1/2 tbsp. peanut butter
  • 2 cups plus 3 tbsp. soy milk(divided)
  • 1/3 cup dessert topping
  • 1 pkg. instant chocolate pudding
  • chopped peanuts
  • chopped walnuts
  • mini chocolate chips
  • whipped cream

Preparation

Step 1

1. Place peanut butter in a medium bowl, gradually add 3 tbsp. milk, stirring until well blended.
2. Whip up the dessert topping until soft peaks form, add to peanut butter mixture. Set aside.
3. Prepare pudding according to package directions. Refrigerate for at least 1 hour.
4. To assemble. First put a layer of pudding into cup, then a thin layer of chopped walnuts, then sprinkle a few chocolate chips. Next, spread a layer of peanut butter, then cover with chocolate pudding. Top with whipped cream and sprinkle peanuts on top.
