Italian Sausage and White Bean Bake

Ingredients

  • 3 Tbs. olive oil
  • 1 1/2 lb. Italian sausages, cut crosswise into 2 " pieces
  • 3 leeks ( white and light green part) sliced in half moons
  • 2 medium carrots, cut into 1/2" pieces
  • 3 cloves of garlic, chopped
  • 1/2 C. dry white wine
  • 1 28 oz. can diced tomatoes
  • 2 15 oz. cans white beans ( such as cannellini), rinsed
  • 1 C. fresh flat leaf parsley, chopped
  • Salt adn pepper to taste
  • 2 C. fresh coarse bread crumbs

Preparation

Step 1

Heat oven to 375. Heat 1 Tbs. oil in larde pot. Cook sausages until browned 6-8 mins. transfer to plate. Wipe out pot and heat 1 Tbs. of remaining oil over medium-high heat. Add leeks, carrots, and garlic and cook, stirring often until beginning to soften, 5-6 mins. Add the wine and cook 1 minute. Add tomatoes and juices; bring to boil. Stir in beans, parsley and 1/4 tsp each salt and pepper. Transfer to a 3 qt. casserole dish. In abowl, combine bread crumbs and remaining oil and sprinkle over bean mixture. Bake until golden brown about 25-30 mins.
