Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter
- 1/4 cup sugar
- 1/2 cup packed brown sugar
- 1 egg, plus 1 egg yolk
- 2 teaspoons vanilla extract
- 2 cups flaked coconut
- 1 cup coarsely-chopped cashews
- 1 cup white chocolate chips
Preparation
Step 1
Preheat oven to 325º. Generously grease baking sheets. Set aside.
In a medium bowl, whisk together flour, baking soda & salt. Set aside.
In a large mixing bowl, with electric mixer, beat together butter, sugar & brown sugar until smooth & creamy.
Add egg & egg yolk, beating well.
Mix in vanilla extract.
Gradually add flour mixture, beating well.
Stir in flaked coconut, chopped cashews & white chocolate chips, mixing well.
Drop batter by rounded Tablespoonfuls, 2 inches apart, onto greased baking sheets.
Bake at 325º for 12-13 minutes or until golden. Remove from oven & set aside to cool for 2 minutes. Remove cookies from baking sheets to wire racks to cool completely.
