Ingredients

  • 1/2 c. frozen corn
  • 1/2 c. grated cheddar cheese
  • 1/2 c. grated Monterey Jack cheese
  • 3/4 cup plus 2 T. dry bread crumbs
  • 8 oz. can tomato sauce
  • 1/2 t. chili powder
  • 1/4 t. oregano
  • 1 1/2 lbs. ground beef
  • 1 egg
  • salt

Preparation

Step 1

Heat oven to 350*, thaw corn. Grate cheeses. Combine corn, cheeses and 2 T. of the bread crumbs. Combine tomato sauce, chili powder & oregano. Combine beef, egg 1 1/2 t. salt, remaining 3/4 cup bread crumbs and half the tomato mixture. Press about 2/3 of this mixture in an 8"x4" loaf pan and push up the sides to make a trough. Cover with remaining meat mixture. Spread with the remaining tomato mixture. Bake until firm about 1 hour. Let stand 10 minutes before slicing.
