  • 3 oz chopped up unsweetened chocolate
  • 1 1/2 cup BITTERSWEET (1 bag) chocolate chips
  • 7 TBS unsalted butter
  • 2 tsp vanilla
  • 1 tsp instant coffee
  • 1/2 tsp Salt
  • 1/2 tsp Baking Powder
  • 1/2 cup all purpose flour
  • 1 cup Sugar
  • 3 room temperature Eggs
  • 1 1/2 cups SEMISWEET(1 bag)) chocolate chips

Step 1

Melt the bittersweet chocolate chips, unsweetened chocolate and butter in double boiler and set aside to cool.

Mix salt, baking powder & flour.

Mix vanilla and coffee granules.

In mixer beat eggs and sugar for 4 minutes at medium high. Add vanilla & mix at medium 20 sec and then add chocolate. mix using low speed 30 sec.

Fold in flour and semi sweet chocolate chips. Set aside (don't chill) for 30 minutes.

Use small scoop (heaping TBS) to form 32 cookies on two parchment sheet lined sheets.

Bake at 350 for about 15 minutes. You want to remove them while they are still under cooked. Let them cool 30 minutes while still on the sheets.
