Cube Steaks with Mushroom Sauce

Ingredients
- 4 cube steaks
- 1 Tbs. olive oil
- 2 Tbs. butter
- 1 Tbs. Dijon mustard
- 1/4 lb. fresh mushrooms, quartered
- 1 can beef broth
- flour

Preparation
Step 1
Place cube steaks between sheets of plastic wrap. Using flat side of mallet, pound meat until double in size. Heat olive oil and 1 Tbs. of butter in a wide frying pan. Fry steaks until done and place them on a warm plate. Add remaining butter to pan. Add mushrooms and cook quickly over high heat. Pour into a bowl. Pour any juices that are on the plate from the steak into pan and heat to boiling. Whisk in the mustard, broth, and flour. Boil over high heat until juices are reduced to a shiny glaze. Pour sauce over steak and top with mushrooms.
