- 1 1/2 lb. crabmeat
- 1/2 stick butter
- 2 tablespoons flour
- 1 cup milk
- Salt and pepper to taste
- 1/2 cup mild cheddar cheese
- 1 tablespoon finely minced onion (I used more)
- Breadcrumbs (homemade)
- 3/4 cup grated cheddar cheese
- additional breadcrumbs, cheddar cheese, paprika
Preparation
Step 1
White sauce:
Melt butter in a saucepan. Remove from the heat and add flour. Stir butter and flour until it becomes a smooth paste. Add half of the milk and return to the heat, stirring constantly. When well mixed, add remainder of the milk. Stir in seasoning to taste. Cook until sauce thickens.
(The thickness can be adjusted by varying amount of flour used.)
Add cheddar cheese to white sauce and blend.
Check crabmeat for pieces of shell, and then add to sauce. Mix in sufficient breadcrumbs, using about 1 cup. Place crabmeat in a casserole, top with additional buttered breadcrumbs, paprika and grated cheese. Bake in a 350 to 375 degree oven until browned, about 20 to 25 minutes.
Minced parsley and green onions may be added.
NOTE:
Can substitute crawfish or shrimp for the crab.
