Nana's Peach Crisp

Ingredients

  • For Topping:
  • 6 cups sliced peaches
  • 1 can frozen apple juice concentrate (thawed)
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 2 teaspoons orange juice
  • 1 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • Pinch nutmeg
  • 1 1/2 cups uncooked oats
  • 1/3 cup wheat germ
  • 3 tablespoons safflower oil
  • 1/4 cup dark brown sugar
  • 2 tablespoons unbleached flour

Preparation

Step 1

Preheat oven to 350 degrees; coat a 9x3-inch baking pan with cooking spray.

Dissolve cornstarch in apple juice concentrate, add peaches and cook on medium heat for about 3 minutes, stirring occasionally. Add lemon and orange juices and cook. Mix oats and wheat germ together until combined; add margarine, brown sugar and flour and combine with hands until crumbly.

Pour peach mixture into pan, sprinkle cinnamon, allspice and nutmeg. Top with topping mixture. Bake for about 40 minutes until top is light brown.
