Ingredients

  • 2 Tbsp. Vegetable Oil
  • 1 Onion, chopped
  • 2 Bell Peppers, chopped
  • 1 tsp. Chili Powder
  • Salt & Pepper
  • 1/2 Cup Long-Grain White Rice
  • 1 Can Black Beans (14 Oz), drained and rinsed
  • 1 1/4 Cup Water

Preparation

Step 1

Heat oil over medium-high. Add onion and Peppers. SAute until sovt, 6-7 minutes. Stir inChili Powder adn season with Salt and Pepper; cook 1 minute more.
Stir in Rice, add Beans, and cover with water. Boil
Cover; simmer 12-15 minutes. Remove from heat; let stand 5 minutes, covered. Fluff; serve with sour cream and green onions if desires.
