Pork Tenderloin with Sweet Potatoes

Ingredients
- 1 pound pork tenderloin
- 1/2 tablespoon vegetable oil
- 1/2 teaspoon coarse salt
- 1/2 teaspoon black pepper
- 2 medium sweet potatoes, peeled and cut into 1 inch pieces
- 1/2 yellow onion, sliced
- 1/2 teaspoon garlic, minced
- 1/8 cup brown sugar
- 1/2 cup chicken broth

Step 1
1. Heat the oil in a large skillet over medium heat. Sprinkle salt and pepper over pork and brown the pork in the oil about 10 minutes, turning occasionally, until browned on all sides.
2. Place the sweet potatoes, onion, garlic and brown sugar in the slow cooker. Place pork on vegetables and pour broth over pork.
3. Cover and cook on low heat setting for 7 to 8 hours. Add a little more salt to taste, if needed and serve.
Note: if your sweet potatoes are large, cut the quantity down by one.
