Peanut Butter Crisscrosses

Ingredients

  • 1 c (6 1/2 oz) vegetable shortening
  • 1 c (7 oz) granulated sugar
  • 1 c (8 oz) brown sugar, packed
  • 2 large eggs
  • 1 tea vanilla extract
  • 1 c (9 1/2 oz) peanut butter
  • 3 c (12 3/4 oz) unbleached all-purpose flour
  • 2 tea baking soda
  • 1/2 tea salt

Preparation

Step 1

Preheat the oven to 350F.

In a large bowl, cream together the shortening, sugars, eggs, vanilla and peanut butter. Sift together flour, baking soda, & salt and add to the peanut butter mixture stirring to combine

Drop cookies by spoonfuls onto a greased cookie sheet and press down w/a fork (or small potato masher), making a crisscross design. Bake cookies for 10 minutes or until lightly browned. Remove from the oven and cool or a wire rack..
