Potatoes - Crispy w/Cumin

  • 1.5 lbs boiling potatoes, scrubbed w/skin on
  • 3 tbsp canola oil
  • 2 tsp cumin seeds
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cayenne pepper

Step 1

Put potatoes in a pot of cold water to cover. Bring to boil, turn the heat down, and simmer, covered until tender, about 30 minutes. Drain, let cool, and refrigerate until very cold. Then peel and cut potatoes into 1-in cubes

Heat oil with cumin in a large wok over med-high heat and cook, stirring, until fragrant, 1-2 minutes.

Add potatoes and cook, stirring often, until a crisp golden brown crust forms, 10-15 minutes.

Stir in salt, pepper, and cayenne. Taste for salt and serve hot.
