Ingredients
- dressing :
- 1 head of Boston lettuce,
- torn into bite-size pieces
- 1/2 cup chopped cilantro
- 1/2 cup chopped mint leaves
- 2-3 peeled and shredded carrots
- 3 green onions, cut into 1 inch diagonal pieces
- 1/4 cup lime juice
- 2 Tablespoons fish sauce
- 2 Tablespoons olive oil
- 1 seeded and minced jalapeno
- 1 Tablespoon grated or minced ginger
- 1 teaspoon sugar ( optional )
- 12 ounces cooked boneless skinless chicken breasts, cut into thin strips
Preparation
Step 1
Toss the lettuce with the cilantro, mint, carrots, and green onions. Whisk together : lime juice, fish sauce, oil, jalapeno, ginger, olive oil, ginger, and sugar. Add chicken strips to lettuce mixture. Pour dressing over salad.
