Avocado, Heart of Palm, Tomato Salad

Ingredients

  • 1 14 oz can (or better, fresh) of hearts of palm, thinly sliced
  • 1 tomato, thinly sliced
  • 1 Haas avocado, quartered and thinly sliced
  • 1/4 cup extra-virgin olive oil
  • 1 T fresh orange juice
  • 1 T fresh lime juice
  • S & P
  • Note: Cut the hearts of palm on a bias for a little better presentation.

Preparation

Step 1

Arrange the hearts of palm, tomato and avocado on a platter.

In a small bowl, whisk together the olive oil, orange juice and lime juice; season with salt and pepper.

Drizzle the dressing over the salad.
